Bo’real Technology

To tackle the problems of the first wave of alternative protein products, Squee team at Natural Resources Institute Finland (Luke) has developed and patented a mycoprotein technology. Bo’real Technology is powered by beer. But do not get the wrong idea, machines do not run by drinking beer (or at least not yet!).

Bo’real technology is fed by food grade side streams from the brewery industry. The secret of Bo’real technology resides in the biofermentation of brewery grains into high protein content meals. The hero of the transformation is our gourmet fungal strain – Saimaa. Saimaa grows within the food ingredients and connects all the nutrients and flavors into one meal. The name Saimaa refers to the most extensive and unique lake from Finland, from which area the strain originates.
